Our Chef
I cook the way I remember warmth: over live fire, in low light, with nothing to hide behind. Every plate is a small act of patience, coaxed from smoke and time.
Chef Aditi Sen trained across wood-fired kitchens in Copenhagen and Kyoto before returning home to build a room lit only by flame. The menu changes with the market and the season, never the philosophy.
